Today we visited a takeaway food market in Thailand and found a delicious surprise: okonomiyaki!
In Thailand's vibrant night markets, where flavours from all over Asia are intertwined, it is common to find a jewel of Japanese cuisine: the Okonomiyaki. This kind of savoury omelet or pancake, originally from Osaka, has conquered Thai and foreign palates alike.
Prepared in sight, on steaming plates, it combines a base of grated cabbage with ingredients to taste, and is crowned with intense sauces and flakes of dry bonito that dance to the heat of the dish.
Although it is a Japanese dish, in Thailand it has been adopted and reinterpreted, becoming a popular option within the wide universe of the street food asiático.



The okonomiyaki It is a traditional Japanese dish with humble roots, originating in the region of Kansai (Especially in Osaka) and also very popular in Hiroshima.
His name literally means "Whatever you want on the grill" (okonomi= what you prefer, yaki = grilled), which reflects its versatility.
Its modern origin dates back to the post-war period in Japan, when the shortage of rice led many families to prepare cheap meals with flour, cabbage and other available ingredients.
This is how this kind of thick omelet was born, cooked on a griddle (teppan) and customisable with seafood, meat, cheese or even noodles.
It is served covered with special sauce, Japanese mayonnaise, nori seaweed and dried bonito shavings (katsuobushi), which move with the heat.
Its name means "whatever you want, grilled", and there are many different versions depending on the region or country.
Ingredients
- 150 g of wheat flour
- 2 eggs
- 200 g of finely chopped cabbage
- 100 ml of water or dashi broth
- 50 g of pork belly or prawns (optional)
- Chives or chopped spring onion
- Okonomiyaki sauce (or a mixture of ketchup, Worcestershire sauce and soy)
- Japanese mayonnaise
- Dry nice flakes (katsuobushi)
- Nori seaweed powder (optional)
- Make the dough: Mix the flour with the water or broth and add the eggs until you get a homogeneous mixture.
- Add ingredients: Add the cabbage and other ingredients to taste (pork, seafood, chives).
- Cooking Pour the mixture into a lightly greased hot griddle. Cook 4-5 minutes per side, until golden brown.
- Decorate and serve: Add the Okonomiyaki sauce, mayonnaise, bonito flakes and nori seaweed. Serve hot.
